Spicy Garlic Lime Chicken

60 degrees in February can only mean one thing: go to the park!  Harlee napped most of the time while I was babysitting (we played with toys before that), so when Jami and Justin got home, we all walked to the park!  Harlee had so much fun swinging and going down the slide, and so did the rest of us.












After some laughs and smiles at the park, we walked back to the house where Jami made our dinner.  I entertained Harlee as he sat in his little walker.  I can’t tell you how preparing the chicken was since I had no part in it, but I can tell you it seemed pretty easy and it was really delicious.  It seemed similar to the blackened salmon: rub the chicken and put in a hot pan of oil and cook until done.  And flip it, of course.  It was a bit spicy, but if you don’t like spice, that’s probably easy enough to leave out.


 
Harlee even enjoyed some of our dinner.  Not the chicken or the rice, but he did chew on some broccoli and bananas.  He seemed to enjoy them.  




 
Here’s the recipe:

Spicy Garlic Lime Chicken

3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (adjust this to your spice preference)
1/8 teaspoon paprika
1/4 teaspoon garlic powder
1/8 teaspoon onion powder
1/4 teaspoon dried thyme
1/4 teaspoon dried parsley
4 boneless, skinless chicken breast halves

2 tablespoons butter
1 tablespoon olive oil
2 teaspoons garlic powder
3 tablespoons lime juice

In a small bowl, mix together salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley. Sprinkle spice mixture generously on both sides of chicken breasts.
Heat butter and olive oil in a large heavy skillet over medium heat. Saute chicken until golden brown, about 6 minutes on each side. Sprinkle with 2 teaspoons garlic powder and lime juice. Cook 5 minutes, stirring frequently to coat evenly with sauce.
    *Side note: this sauce tastes delicious mixed with white rice, which we served with the chicken.  Yum!

    I'm impressed with all your cooking. It looks like the Mardi Gras feast was quite the production!

    1. Thanks! He's so fun to watch exploring foods, I'm sure you're experiencing that too :) He's hating a lot of it though! Although he does the best if he can hold food in his hand and feed himself, so I'm really liking the whole baby-led weaning approach. The Mardi Gras feast was great! I highly recommend those recipes! Good to hear from you, hope you and your family are doing well :)
